I love homemade cheesecake. It’s healthier and not so sweet as the regular cake. I also like its crunchy crust. Having a piece of cold cheesecake in these hot summer days is such an enjoyment! However, a normal full-size cheesecake is too much for me. Minis are definitely a good idea. They are easier to share, transport, and great for kids’ party. I came across this nice recipe for raspberry swirl mini cheesecakes and really liked it. They are like the traditional cheesecake in cupcake sizes. The base of each mini cheesecake is crunchy crust of Oreo-chocolate sandwich cookies topped with creamy cheesecake filling that’s swirled with fresh raspberry puree. The raspberry marbling on the top is so beautiful and adds both flavor and color. These cute and tasty raspberry swirl mini cheesecakes are perfect dessert ideas for family gatherings and parties.
